At MasterChef Italia (THE SPECIAL) an unprecedented green journey begins through the new frontiers of sustainability in the kitchen: we talk about the future of gastronomy, the focus is on new scenarios for the protection of natural ecosystems. In the episodes of Thursday 8 February, on Sky and streaming on NOW and always available on demand, the judges Bruno Barbieri, Antonino Cannavacciuolo and Giorgio Locatelli will welcome, in the last Skill Test of the season dedicated to a cuisine that takes care of the territory by enhancing its ingredients, two excellent examples of sustainability, both holders of 1 Michelin star and 1 green Michelin star: chef Chiara Pavan of the Venissa restaurant, on the island of Mazzorbo in Venice, who will immerse the competitors in the Venetian lagoon by telling her idea of ​​environmental cuisine which on the one hand takes care of the environment and on the other hand describes it; and chef Riccardo Gaspari, from Sanbrite in Cortina d’Ampezzo, who will bring the scents of the mountains and the knowledge of regenerative cuisine to the stove, capable of using waste and giving value to very specific typical forest ingredients (such as pine mugo) or apparently simple (like celeriac).

Leonardo Colavito and the winner Edoardo Franco will also return from the Masterclass a year ago; then space for Kateryna Gryniukh, finalist of the seventh edition; Bruno Barbieri will take the stand to question Alida, the unforgettable competitor of the fifth Masterclass. The commitment of the entire MasterChef Italia world to issues of environmental and social sustainability is renewed, promoting conscious and eco-sustainable consumption, respecting the environment and not wasting food resources. For years now, production has adopted a plastic-free and eco-friendly approach in all workplaces, all consumer products related to food (plates, glasses, cutlery, trays, napkins) are compostable and eco-sustainable in nature, and collaborates with Last Minute Market to recover the surpluses left unused during the recording of the episodes in favor of the non-profit organization “Opera Cardinal Ferrari” which manages a canteen for people in difficulty in Milan.

Furthermore, since last year, by perfecting the purchasing, disposal and recovery processes of products and implementing a management system for food waste, MasterChef Italia has obtained, for the first time in the world, the “Food Waste Management System” certification from Bureau Veritas, present globally and accredited by over 60 international bodies, world leader in offering verification, certification and audit services in the fields of Quality, Health and Safety, Environment and Social Responsibility. Furthermore, Bureau Veritas has also certified the correct application of the “Green Audiovisual” protocol which certifies the ability to manage environmental sustainability, reducing consumption and environmental impact, reducing transport, adopting correct disposal of waste and waste generated .
